July 4 is always a special day at our house. It is a time to invite family and friends and celebrate our Independence with either a fish fry or a BBQ cookout. This year we opted for spare ribs marinated with my special rib-rub topped with JEB’s Old Fashioned Hickory Smoked BBQ Sauce cooked on our state-of-the-art George Foreman Grill.
Although, the flavor and savor of total electric BBQing is not as toothsome as charcoal queing, it is more agreeable on hot days. Have no fear, I have not abandoned charcoal cooking.
On SSI, the climax of July 4 is the awesome fireworks display at the pier, that is, if you can survive the packed people-jam that cram in to this thing. Being there may be the closest thing to a sardine one will ever be.
It is supposed to be fun. However, to endure the hot wedge and press on a sweltering afternoon calls for a redefinition of fun.
The auto traffic on SSI during July 4 increases to near Atlanta-By-Pass-during-rush-hour proportions.
We sacked out on July 3 insulated from the overbearing outside heat by blessed air conditioning. We slept like hibernating bears with visions of BBQ ribs and all the trimmings dancing in our heads.
On July 4, with sleep still in our eyes, we hit the carpet early. We had a lot to do to get our dinner done.
I was in the kitchen getting the select spareribs ready to marinate when B. J. came in with that look she displays when something is not right. I paused and waited anxiously for her pronouncement. “The air conditioner is not working.”
“That’s not funny,” I replied.
“I’m not joking.”
